Apple Butter and Pumpkin Pie. My house smelled heavenly when I made this.

My daughter Melinda shared this recipe with the family.

1 cup Apple butter

1 cup canned pumpkin

1/2 cup packed brown sugar

1/2 tsp salt

3/4 tsp ground cinnamon

3/4 tsp ground nutmeg

1/8 tsp ground ginger

3 eggs, slightly beaten

3/4 cup evaporated milk

1 unbaked 9-in pie shell (frozen)

Preheat oven to 425 F

-[Use a spoon to mix] Combine apple butter, pumpkin, sugar, salt and spices in a large bowl. Then stir in eggs (which should already be slightly beaten). Gradually add milk and mix well. Pour into pie shell. Bake for about 40 minutes or until set.

**You may end up with leftover mixture, I would pour the remaining into a cupcake tin.

**If crust starts to burn, wrap tin foil around the crust and finish baking.

Sweetened Whipped Cream:

1 cup cold heavy cream

2 TBsp confectioners sugar

1/2 tsp pure vanilla extract

-Place cream in medium bowl & beat w/ mixer at medium speed until thick and frothy. While beating add sugar and vanilla and continue to beat until soft peaks form.

-Dust cinnamon over the whipped cream to finish off.

My sister-in-law Dawn shared this recipe with me, and as she was making it for a party, she kept saying, “It’s like pumpkin crack — it’s so addicting!” I laughed and told her she had to share the recipe with me. It’s made with pumpkin, vanilla pudding, whipped topping, pumpkin pie spice, vanilla, and a splash of butterscotch schnapps. I have to admit, it really does sound (and taste) addicting. This year, I was thrilled when she brought it to one of my get-togethers — it was an absolute hit!

1 (15 ounce) can solid pumpkin

1 (5 ounce) package instant vanilla pudding mix

1(16 ounce) container frozen whipped topping, thawed

1 tsp pumpkin pie spice

1 tsp pure vanilla extract

1 Tbs butterscotch schnapps

Mix all together, dust the top with a sprinkle of nutmeg.

Great for dipping with ginger snaps, vanilla wafers or slices of apples.

Natural Looking Poinsettia's

Spicy Sausage, celery, onions, apples,
and dried cranberries make this stuffing sweet and savory.

16 cups 1-inch bread cubes, white or sourdough (1 1/2 pound loaf)

8 tablespoons (1 stick) unsalted butter

2 cups medium-diced yellow onion (2 onions)

1 cup medium-diced celery (2 stalks)

2 Granny Smith apples, unpeeled, cored and large-diced

2 tablespoons chopped flat-leaf parsley

1 tablespoon kosher salt

1 teaspoon freshly ground black pepper

3/4 pound sweet or spicy Italian sausage, casings removed

1 cup chicken stock

1 cup dried cranberries

Preheat the oven to 300 degrees F.

Place the bread cubes in a single layer on a sheet pan and bake for 7 minutes. Raise the oven temperature to 350 degrees F. Remove the bread cubes to a very large bowl.

Meanwhile, in a large saute pan, melt the butter and add the onions, celery, apples, parsley, salt and pepper. Saute over medium heat for 10 minutes, until the vegetables are softened. Add to the bread cubes.

In the same saute pan, cook the sausage over medium heat for about 10 minutes, until browned and cooked through, breaking up the sausage with a fork while cooking. Add to the bread cubes and vegetables.

Add the chicken stock and cranberries to the mixture, mix well, and pour into a 9 by 12-inch baking dish. Bake for 30 minutes, until browned on top and hot in the middle. Serve warm.

Sausage and Herb Stuffing

Cranberry-Apple Casserole a fruity side to your meal or dessert. Apples, fresh cranberries, and cinnamon spice instant oatmeal.

3 cups apples, peeled and chopped

2 cups fresh cranberries

1/2 cup plus 2 tablespoons flour, divided

1 cup sugar

3 pkgs. cinnamon and spice instant oatmeal (such as Quaker)

3/4 cup chopped pecans

1/2 cup light brown sugar

1/2 cup melted butter

Preheat oven to 350°F.

Mix apples and cranberries with 2 tablespoons flour until coated. (For best results, do this in a gallon-size zip-top bag.) Add in sugar, and continue to mix until evenly coated. Pour the flour- and sugar-coated fruit into an 11- x 7-inch casserole dish.

In a separate bowl, mix oatmeal, remaining flour, pecans, brown sugar, and melted butter until it resembles a crumble. Spoon the crumble over the fruit. Bake uncovered for 45 minutes.

Cranberry-Apple Casserole

I love this very pretty creamy cheese dish and it is so easy to make. Serve with crackers, French bread or fruit.

1 sheet frozen puff pastry, thawed

1/2 cup Smucker's Orchard's Finest Northwest Triple Berry Preserves

8 oz. round baby wheel brie cheese

1/4 cup chopped hazelnuts or pecans

1 large egg

1 tablespoon water

Assorted crackers, pear slices and/or apple slices

Heat oven to 400. Unfold puff pastry on a lightly floured surface. Roll gently to seal any cracks in pastry. Spoon preserves onto center of pastry. Place cheese on top of preserves. Sprinkle evenly with nuts. Fold pastry up over the cheese to cover. Trim excess pastry and press to seal seams. Reserve pastry scraps.

Whisk egg and water in small bowl. Brush seams with egg mixture. Place seam-side down on baking sheet. Cut pastry scraps into decorative shapes and arrange on top, if desired. Brush with egg mixture.

Bake 25 minutes or until golden brown. Let stand 20 minutes before cutting. Serve with crackers and sliced fruit.

Triple Berry Baked Brie

Our rib roast came out perfectly. This is also known as a Christmas Roast.

1 (5 pounds) standing beef rib roast

2 teaspoons salt

1 teaspoon ground black pepper

1 teaspoon garlic powder

Directions

Allow roast to stand at room temperature for at least 1 hour.

Preheat the oven to 375 degrees F (190 degrees C). Combine the salt, pepper and garlic powder in a small cup. Place the roast on a rack in a roasting pan so that the fatty side is up and the rib side is on the bottom. Rub the seasoning onto the roast.

Roast for 1 hour in the preheated oven. Turn the oven off and leave the roast inside. Do not open the door.

Leave it in there for 3 hours. 30 to 40 minutes before serving, turn the oven back on at 375 degrees F (190 degrees C) to reheat the roast. The internal temperature should be at least 145 degrees F (62 degrees C). Remove from the oven and let rest for 10 minutes before carving into servings.

Add the cheese to a saucepan and melt over medium heat. Add the diced

tomatoes and chiles, pimientos and jalapenos

and mix. Pour into a chafing dish to keep warm.

2 pounds queso blanco-style processed cheese, such as

Velveeta Queso Blanco,

cut in 1/2-inch cubes

2 cans diced tomatoes and green chiles, such as Rotel

1 jar diced pimientos

2 jalapenos, seeded and chopped finely

Tortilla chips, for serving

Serve with tortilla chips.

Santa would love these! Creamy peanut butter delightful cookies. Let's make up a batch.

3/4 cup creamy peanut butter

1/2 cup Crisco Shortening

1 1/4 cups firmly packed light brown sugar

3 tablespoons milk

1 tablespoon vanilla

1 egg

1 3/4 cups all-purpose flour

3/4 teaspoon salt

3/4 teaspoon baking soda

Heat oven to 375.

Combine peanut butter, Crisco, brown sugar, milk and vanilla in large bowl. Beat at medium speed of electric mixer till will blended. Add egg. Beat just until blended. Combine flour, salt and baking soda. Add to creamed mixture at low speed. Mix just until blended. Drop by heaping teaspoonfuls 2 inches apart onto ungreased baking sheet. VARIATION: Flatten slightly in crisscross pattern with tines of fork. Bake at 375 for 7 to 8 minutes, or until set and just beginning to brown. Cool 2 minutes on baking sheet before removing to kitchen counter top.

Makes 3 dozen cookies.

Santa's Letters Mailbox

It wouldn't be the holiday dinner without cranberry sauce. This recipe frees up your time because it is cooked in a slow-cooker. The sweet-tart taste you love and expect from the fresh and dried cranberries make a deeper complex cranberry sauce flavor.

2 (12-oz.) packages fresh cranberries

1 cup granulated sugar

1 cup firmly packed light brown sugar

1 cup fresh orange juice

2 tablespoons grated fresh ginger

1 cup sweetened dried cranberries

1 tablespoon orange zest

Stir together first 5 ingredients and 1/2 cup water in a lightly greased 3 1/2- to 4-qt. slow cooker.

Cover and cook on HIGH 3 to 3 1/2 hours or until cranberries begin to pop.

Uncover and cook 30 minutes. Stir in dried cranberries and orange zest. Cool completely, stirring often (about 1 hour; mixture will thicken as it cools). Cover and chill 8 hours. Store in refrigerator up to 2 weeks.

An easy homemade turkey gravy, rich taste doesn't get any better than this.

1 package of Turkey Gravy Mix (McCormick)

1 tablespoons flour

1 1/2 cups cold water

1/2 cup turkey pan drippings or turkey broth

1/2 cup chopped cooked turkey giblets

Mix turkey gravy mix and flour in medium saucepan. Gradually stir in water and turkey drippings with whisk until smooth. Stir in chopped turkey giblets.

Stirring frequently, cook on medium heat until gravy comes to boil. Reduce heat and simmer 5 minutes or until thickened. (Gravy will thicken upon standing.)
